Šipon
Šipon is our traditional wine variety, which got its name from the time of Napoleon's conquests, when his soldiers tasted the local wine on their march through the wine-growing regions and praised it with the words "C' est bon". The locals heard a little in their own way, and that's how the Šipon was named. In Croatia it is called pušipel, in Hungary it is furmint. This wine was known as luttemberger at the Austrian court. Among quality white wines in our country, this variety is widespread and is among the oldest.
The wine is dry, in good vintages also semi-dry with a delicate fruity varietal flower. The acid, which is harmoniously integrated into the not too high alcohol, gives the šipon a pleasant freshness, which perfectly complements many meat and spicy dishes, especially tünka meat. Due to these properties, the grape is also ideal for producing other qualities - late harvests, strawberry selections, and it is particularly ideal for icewine. The excellent vintages also age excellently and it is one of the oldest wines in Slovenia.
